  1. Combine undrained tomatoes and Velveeta in medium saucepan.
  2. Cook over medium heat 5 minutes or until Velveeta is melted completely and mixture is blended, stirring frequently.
  3. Serve warm as a dip with tortilla chips, crackers or cut-up fresh vegetables.

  1. Preheat broiler. Spray broiler pan with PAM® cooking spray; set aside.
  2. Place undrained tomatoes in food processor and pulse until finely chopped. Drain half of chopped tomatoes and combine with sour cream to make dip; set aside. Place remaining undrained tomatoes in small bowl; combine with butter and honey.
  3. Sprinkle chicken with salt and pepper in large bowl. Add half of tomato mixture to wings; toss to coat. Transfer to broiler pan; broil 10 minutes. Turn wings; spoon remaining tomato mixture on wings. Broil 10 minutes more or until chicken is no longer pink and tender (180°F). Serve with dip.

  • 1 can (10 oz) Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
  • 12 ounces Velveeta®, cut into 1/2-inch cubes
  • 2 cans (10 oz each) chunk chicken breast, drained
  • 6 ounces baked tortilla chips (6 ounces = about 6 cups)
  • 1-1/2 cups shredded lettuce
  • 1 can (15 oz each) whole black beans, drained, rinsed
  • 3/4 cup sour cream
  • 3/4 cup guacamole

Directions

  1. Combine undrained tomatoes and Velveeta in large microwave-safe bowl; cover. Microwave on HIGH 3 minutes or until Velveeta melts, stirring after 2 minutes. Remove from microwave; stir until mixture is blended.
  2. Meanwhile, heat medium nonstick skillet over medium-high heat. Add chicken; heat 2 to 3 minutes or until hot, stirring occasionally.
  3. Arrange tortilla chips on large platter. Pour tomato mixture over chips; top evenly with chicken, lettuce and beans. Spoon on dollops of sour cream and guacamole.

  1. Heat large skillet over medium heat. Add bacon; heat 3 to 5 minutes or until crisp, turning occasionally. Drain bacon on paper towels and crumble; set aside.
  2. Add beans, drained tomatoes and cream cheese to skillet; heat 5 minutes or until beans are hot, stirring occasionally.
  3. Spread bean mixture in shallow serving dish. Top with queso fresco cheese and crumbled bacon. Sprinkle with green onions and serve with tortilla chips, if desired.

  1. Stir together refried beans and drained tomatoes in medium bowl. Spread 1/3 cup bean mixture over half of each tortilla. Top each with 1/4 cup chicken and 1/4 cup cheese. Fold each tortilla in half to cover filling.
  2. Spray large skillet with cooking spray; heat over medium heat 1 minute. Place 2 quesadillas side-by-side in skillet. Cook 5 minutes, turning once, or until golden brown on each side and cheese melts. Repeat with remaining quesadillas.
  3. Cut each quesadilla into 4 wedges. Serve with onions and sour cream, if desired.
