Pumpkin Top Ramen® Bowl

Ingredients

  • 2 packages of Top Ramen® Chicken Bowl
  • 2 cups shiitake mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 onion, sliced
  • 3 tsp ginger, minced
  • 3 cups water
  • 1 tsp salt
  • 3/4 cup pumpkin purée
  • 2 tsp Sriracha
  • 15 oz light coconut milk
  • 1 tbsp oil
  • 10 oz cooked chicken, cut into strips
  • 1/4 cup cilantro, to garnish

Directions

  1. Heat oil in a pan over medium heat. Add garlic, onion and ginger. Cook for 5 minutes. Add mushrooms and cook for an additional 3 minutes.
  2. Add water, coconut milk and seasoning packets and stir. Then add pumpkin purée, Sriracha, chicken and salt. Simmer for 5 minutes.
  3. Add noodles and cook for 3 minutes.
  4. Divide soup into bowls and garnish with cilantro. Enjoy!
