Dredge the chicken breasts in the melted butter. Then season both sides generously with seasoning.
Heat a cast-iron skillet to medium heat. Add the other half of butter and allow it to melt. Place the seasoned chicken into the skillet.
Cook for approximately 3–4 minutes, undisturbed. Flip the breast and cook the other side for another 3–4 minutes or until darkens.
Place chicken in oven to finish cooking, approximately 5–8 minutes or until internal temperature reaches165°F.
Meanwhile, squeeze juice of half a lemon into the skillet (skillet will still be warm, but leave off heat). Prepare mashed potatoes and salad per package directions and reserve.
Once done, allow chicken breasts to rest 2 minutes before serving.
Lastly, whisk yogurt in skillet with lemon juice and pan drippings until smooth.
Serve blackened chicken with mashed potatoes & salad. Top with lemon-yogurt sauce and fresh cilantro.
