Grilled and Loaded Smashed Potatoes

Ingredients

  • 1.5 lb. medium Yukon gold potatoes
  • 1 Tbsp. vegetable oil
  • 5 tsp. McCormick® Grill Mates® Montreal Steak Seasoning, divided
  • 6 slices applewood smoked bacon, cut into 1/4-inch pieces
  • 1 cup chopped yellow onion
  • 1/2 cup chopped red bell pepper
  • 1/2 cup shredded cheddar cheese
  • 2 Tbsp. finely chopped green onions
  • 1/4 cup sour cream

Directions

  1. Place potatoes on a microwave-safe plate. Pierce potatoes with a fork several times. Microwave on HIGH for 5-6 minutes or until fork-tender but still firm. Let stand until cool enough to handle. Toss potatoes, oil and 3 tsp. of the Seasoning in a large bowl until well coated. Test Kitchen Tip: Pre-cooking the potatoes in the microwave before grilling helps reduce overall time at the grill!
  2. Grill potatoes over medium heat for 4-5 minutes or until skin is crispy, turning frequently. Meanwhile, cook and stir bacon in a large cast iron skillet on the grill for 8-10 minutes or until crisp. Add yellow onion and bell pepper; cook and stir for 2-3 minutes or until tender-crisp.
  3. Push bacon mixture to one side of the skillet. Place potatoes in other side of skillet. Smash each potato with a heavy spatula, bottom of a small sturdy bowl, or a meat pounder. Sprinkle potatoes with remaining 2 tsp. of Seasoning. Spoon bacon mixture over the potatoes. Sprinkle with cheese. Cover pan or close grill. Cook for 3-5 minutes or until cheese is melted. To serve, sprinkle with green onions and with dollops of sour cream.
